Gluten Free Buckwheat Toaster Pancakes

You might be thinking-What is a toaster pancake?  It is our new favorite kid friendly gluten free recipe around the house.  These are great pancakes that can be stored in the refrigerator and heated up in the toaster.  Even better here...my husband has become the pancake expert so every Sunday he makes a batch of these and then during the week we can heat them up in the toaster when we need a quick breakfast or lunch.  My son eats them topped with goat yogurt and honey or maple syrup.  I like to mix sunflower seed butter with some honey or maple syrup and spread that on top for some extra protein. This recipe was originally developed by my lovely neighbor Juanita.



ingredients:

1 1/2 cups buckwheat flour ( I like to grind mine in my Vitamix)
1 1/2  cups brown rice flour
2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon sea salt
5 tablespoons butter, ghee or coconut oil melted
1/4 cup honey or other liquid sweetener
3 pastured eggs
2 cups coconut milk, almond milk or any other milk or milk substitute

Combine all dry ingredients in a bowl and set aside.  Whisk together wet ingredients and then add to dry and mix well.  Heat a cast iron skillet (or any other that you have) and using about a teaspoon or coconut oil coat the skillet.  Pour batter and cook until you see small bubbles, and flip pancake cooking until done on both sides.  Add a dash of coconut oil to the pan between each pancake.  Store extra pancakes in refrigerator in a sealed glass container and heat in toaster when needed.

Yield: 15 pancakes
