Strawberry Mint Coconut Pops

I recently bought a flat of Hood Strawberries from Know Thy Food (best food buying group ever).  I had to quickly freeze them before time ran out because, as a strawberry farmer once said to me ~"those Hood variety strawberries go bad if you look at them wrong."  So I found myself with an overabundance of very ripe strawberries as well as massive amounts of mint growing in my garden. Add a can of coconut milk, some honey and vanilla stevia and these pops are a huge hit.  As you know from other posts, I always try out recipes on the neighborhood kids.  These definitely passed, and the slightly phallic shaped rocket popsicle molds were also a success (take that Mr. Ice Cream Man...just keep driving past my house with that catchy tune).


Strawberry Mint Coconut Pops
ingredients:
9 large strawberries (approximately 1 pound)
2-3 tablespoons honey
dash of vanilla bean powder or vanilla extract
10 fresh mint leaves
1 can full fat organic coconut milk
7 drops vanilla cream liquid stevia
pinch of sea salt

preparation:
Place all ingredients in a high speed blender and blend until smooth.  Pour into popsicle molds and freeze overnight or for 5-8 hours.

These looks so refreshing! It's funny...I have the exact same Popsicle molds at home and when I have a bunch of kids over, they always fight over who gets to have the rocket ship popsicle and who has to have the "regular" popsicle.

We have them too and I never thought about their resemblance to other things. That's funny. I am always tempted to stock up the local ice cream guy with some of our yummy healthy popsicles so that my daughter can have some of the fun of hearing him coming and running out to buy something with her own money. That's a very happy memory I had as a child--however, the the stuff we were buying was probably pretty gross. We always like new popsicle recipes!

Well, their resemblance to other things was quickly pointed out to me by a friend when she saw the picture so I had to address the issue! I always thought that a healthy popsicle/ice cream truck that plays really hip kids music would be a great business. Can you imagine the biodiesel/hybrid ice cream woman driving down the road playing age appropriate world music with organic healthy ice cream/pops???? If it happens anywhere it will be Portland first!

I love the image of the hip ice cream woman selling healthy treats and blaring out fantastic world music for children :-). Santa Cruz is a likely starting point too! Hmmm....
