Chia Chocolate Cookies


I ate way too many of these. I couldn't help it and I love that they are gluten free, grain free, dairy free, low glycemic, high protein, high fiber and high in good fats. Kid tested and approved, PLUS...they take about five minutes to prepare and 11 minutes to bake. Enjoy~

ingredients:

1 1/2 cups almond meal
1 cup ground chia "flour" (finely ground, you can use a coffee grinder or Vitamix dry blade)
1/4 cup plus 2 tablespoons organic cacao or cocoa powder
3/4 cup coconut palm sugar (plus some if you like sweeter cookies)
1/2 teaspoon salt
1/2 teaspoon baking powder
3/4 cup melted coconut oil
2 eggs
1 teaspoon vanilla exract

preparation:
Preheat oven to 350 degrees. Combine all dry ingredients in a bowl. Whisk together eggs and vanilla. Add to dry mixture along with melted coconut oil. Mix well. Using 1 tablespoon measure cookies onto ungreased cookie sheet. Press into cookie shape. Bake for 11 minutes at 350.

yield: 3 dozen small cookies

Yes the do look delightful! If I wanted to substitue stevia powder for the coconut palm sugar will it ruin the consistency? Should I add extra water to make up for the reduced fluids? Cheers :)

Im not sure about the stevia. You definitely wouldn't need more liquid as the coconut palm sugar is dried. You certainly wouldn't put 3/4 cup stevia in Im sure that would not taste good! You could just try taking out the coconut palm sugar and adding some stevia powder and possibly less coconut oil, or add it last until the consistency is dough-like if that makes sense. I will experiment with it and let me know if it works out for you!
