Spring is definitely here in Portland. I went to the farmers market last week and was thrilled to find an abundance of edible weeds, in particular Miner's Lettuce and Chickweed. Miners lettuce (Clatonia perfoliata) is in the purslane family and grows in shady areas in spring when the weather is moist and cool. It is high in Vitamin C and Iron. It gets its name from the miners in California who ate it to avoid scurvy. Chickweed (Stellaria media) is a common garden weed and a favorite food of birds (possible why it is called Chickweed). It has many health benefits as a food and a topical ointment (made into a salve). It is high in vitamin C, calcium, magnesium, iron, potassium, gamma linolenic acid, and zinc. My son Isaac loves these weeds. He is not a big fan of regular lettuce but he loves something about these edible weeds. Here he is to talk all about it. I had to edit the video way down as he decided to tell numerous stories during filming. Also, its a bit fuzzy as the sun was actually shining right in our window in Portland (a rarity these days).
I love the simple mix of Chickweed and Miners Lettuce with with this Spicy Hemp Dressing:
Spicy Hemp Dressing
1/2 cup hemp seeds
1/2 cup water
pinch of cayenne (more if you like spicy)
3-4 tsp tamari
pinch of salt
juice of 1 1/2 meyer lemons (if you can find them, otherwise regular organic lemons)
1 teaspoon of yacon syrup, honey, or maple syrup
*blend above ingredients until smooth and then add:
1/4 cup fresh cilantro leaves
blend until you see flakes of green (do not over blend)

Yum, this sounds really good Andrea! I love hemp seeds. Lately I have been making a creamy garlic and fresh herb dressing made from soaked walnuts - all blended up of course. The spring greens are amazing up here right now - I bet they are down there too! :)
