A few friends have asked how to make the wrap in the photo at the top of my blog. Here is a video of how to do it. It hope to make more of these videos soon!
Greens:
8 leaves swiss chard, kale, or collard greens, thick stem removed, washed and spun
1 lemon, juiced
sea salt
Pate:
1 c sunflower seeds, soaked 2-4 hours, drained and rinsed well
1 clove garlic, chopped
2 limes, juiced
1 tbsp red onion, chopped
¾ c cilantro, chopped
½ tsp sea salt
pinch of cayenne or jalapeno pepper (optional)
Wrap:
1 avocado, thinly sliced
1 mango, thinly sliced
1 red pepper sliced
optional: sprouts, shredded carrots, chopped cilantro

I really enjoyed these! I had attempted to make wraps with collard greens before and it was hard to get them to stay rolled. Your video was very helpful. Collard greens roll much better after being soaked and then having the middle vein rolled with a glass. Great technique! My two-year-old daughter ate the pate in globs out of the bowl. Good stuff!
