I was reading through the Menu For The Future handbook put out by the Northwest Earth Institute and came across this question: "What images does the word 'farm' evoke for you?"
I spent many years working on organic farms, and because of this, I am a big advocate of supporting local farmers. If you do not grow our own food, it is important to acknowledge those who do. I try to menu plan for the week so that I can visit one of the many local farmer's markets and pick up my produce. For a list of markets in your area visit www.localharvest.org. Yesterday, I was lucky enough to make it to the opening day of the Hillsdale Farmer's Market in SW Portland. I picked up some beautiful produce and will be making a marinated Bok Choy salad for you later in the week. During the spring and summer, I will be visiting other markets and local farms and posting video reviews for you all to see. The Hillsdale market is a nice-sized market full of local produce, mushrooms, seafood, flowers and more. My favorite vendors that you will see in the video can be found at:
